Peachy Keen!

Peaches are plentiful this time of year.

So much so, they send truckloads north to my part of the country to sell directly to us. Just drive up and buy lots of peaches right off the semi-trailer! I’ve never done that. But all the Instagram ads crushing my feed meant that I had to try a new (to me) peach dessert:

Fried Peaches with Ricotta and Honey

3 Servings (adjust ingredients as needed)Ingredients you’ll need:

  • Peaches (3)

  • Brown sugar (1 heaping tablespoon)

  • Salt (1/2 teaspoon)

  • Unsalted butter (4 tablespoons)

  • Ricotta cheese (1/4 cup per serving, 3/4 cup total)

  • Hot honey (chili-infused, not ‘warm’, drizzling to taste)

Putting it together:

  1. Heat up a cast iron skillet or your other favorite frying pan to medium heat. Be sure the pan is ready before you add ingredients.

  2. While the pan is heating up, slice the peaches into wedges and remove/discard the pit. You should have about eight wedges per peach.

  3. Add the butter and melt until it starts to bubble and turn a bit brown.

  4. Mix in the brown sugar and salt. Continue stirring until the mixture starts to caramelize.

  5. Add in the peaches and stir into the sugar mix. Continue cooking on medium for 4 minutes per cut side. There should be some crust on the peaches.

  6. Remove pan from heat.

  7. Put 1/4 of ricotta in each bowl (3).

  8. Add eight slices of peach to each bowl on top of the ricotta.

  9. Drizzle hot honey on top.

  10. Enjoy!!!
