Is it worth a million dollars?

If you could create a tasty, easy-to-cook meal that didn’t actually cost a million dollars, would you do it?

I do most of the cooking at home. It’s something I love: sharing a good meal with my family. Sometimes I use recipes that are a bit more involved. Other times it’s a ‘pantry’ stir-fry, no recipe, just delicious.

Cooking at home isn’t without its challenges. It takes some grocery planning and a little more time than DoorDashing. In my home, there are people with gluten sensitivity, a high school athlete, and two adults maintaining their protein intake while keeping everything else in check.

Plus, once a week, I like to have leftovers. This allows for eating on various schedules and for the cook to have a night off during the week. My daughter isn’t into most breakfast foods, and leftovers are the perfect morning meal for her.

This is where the Million Dollar Ground Beef Casserole comes in.

A balanced mix of ground beef, two kinds of cheese, carrots, onion, tomato, and just enough pasta to say YUM!

Joe Cook’s spin: I doubled the ground beef, left out the wine, added a tablespoon of red wine vinegar for acidity, and used gluten-free panko breadcrumbs.

An easy-to-make meal that nourishes my family and is loved by all who eat it. My wife commented on how beautiful it looked right in the pan.

Our daughter ate it up, had more as a snack before bed, and ate it again for breakfast.

That just might be worth a million dollars.
